The Case

Everything is made here, by hand.

The case changes. There are 80 to 120 things in it at any time, from hand-painted bonbons to tarts to house-made ice cream. No preservatives, no artificial flavors. Here is what you will usually find.

The star

Bonbons

Hand-painted cocoa-butter shells over a ganache or caramel center. The colors are painted, not printed, so no two trays look alike. Classic in technique, contemporary in design.

Painted, not decorated

Colored cocoa butter, by hand

The signature look began with colored cocoa butters and a friendship with a Mexican chocolatier. Every shell is hand-airbrushed and splattered before it is filled, which is why the case looks like a tray of loose gemstones.

Truffles

Dark, milk and white, ganache-centered and rolled in-house. The same wild flavor range as the bonbons, in a softer bite. Long Road Gin, Rowster Coffee, Raspberry Caramel and more.

Tree-to-Bar

Single-origin chocolate, from the tree up

Charles partnered with Efren Elvir Maradiaga of Atúcun to make single-origin chocolate from Honduran cacao, an ancestral home of cacao. It is made tree-to-bar, and you can taste the place in it.

Traditional cocoa, Mokaya Mexican cocoa, salted-caramel hot chocolate and a Parisian-style drinking chocolate. Thick, real, and made from the same chocolate we build everything else from.
